Almond Shortbread  - Vegan and Keto

I love rich biscuits, specifically shortbread, specifically the scottish shortbread your Granny has in the cupboard in the pantry. You know the kind. I thought there must be a good alternative that both vegan, keto and dairy free. ~So here it is and hope you guys make and enjoy it!

Shortbread - Vegan, keto

  • prep time: 5 minutes
  • cook time: 20 minutes
  • total time: 25 minutes plus cooling

Servings: 15

Ingredients:

  • 1 cup Almond flour
  • 1/2 cup coconut flour
  • 3/4 cup Vegan Butter
  • 1/2 cup granulated sweetner (I used 1/2 and 1/2 eryth. gold and normal granulated
  • 1 tsp Vanilla Extract
  • 1/2 tsp Salt
  • Pinch of cinnamon
  • 1/2 tsp Baking powder

    Instructions:

    Preheat oven to 180 degrees Celcius or 360 Farenheit (fan ovens beware, lower degrees by 10)
  • Mix them all together, let it sit for 5 minutes, roll between parchment and cut desired shape or into balls and flatten
  • Place on a parchment lined baking sheet
  • For small shortbread - 10-15 minutes and large around 20-25 minutes

*these do tend to burn a little easier so as with all keto baking, keep an eye
